Allergy Friendly Recipes and Tips

Nutrition is so important in keeping Finnley healthy.  On top of being a little OCD about nutrition, Finn is allergic to Peanuts, Milk, Wheat, Soy and Corn.  His diet mainly consists of all fruits and veggies, beans, quinoa, whole grain brown rice and eggs.

Birthday Cake
I know there are a ton of recipes out there, but I really like Arrowhead Mills Chocolate cake mix.  I also like to make home-made buttercream frosting and I found a great organic palm shortening so it contains no dairy or soy or meat products and it is non-hydrogenated.  It is made by Spectrum organics 

Milk Substitutes:
As far as milk goes.  Finnley drinks no sugar added Almond Milk.  We also really like Hemp Milk and that is what he drank until he was three.  Hemp Milk is probably the most nutritious and has tons of Omegas, but it is also the most expensive.  We would always wait until they went on sale and then buy in bulk - typically, if you buy a case - the store will give you 10 - 15% off.

Wheat Substitutes:
Pasta: we typically give Finnley whole grain brown rice pasta or Quinoa pasta.  You have to be careful though to make sure they aren't blended with another grain such as corn.  I like the Andean brand Quinoa pasta.

Bread: The best allergy friendly bread we have tried is Udi's.  Again, it is expensive, but you can usually find coupons on-line.  The loaves are really small and you can really only get about 5 sandwiches out of them and the heals are useless for almost everything.  However, I do toast the ends and process them with Italian seasoning and use for the breading eggplant, etc.

Making gluten-free bread is really easy too.   
 
Here is the easiest recipe I have found and it is definitely much more edible then any other brand you can buy at the store although it probably costs the same:

3 cups of gluten-free/wheat free flour (I like quinoa or almond flour)
1 1/2 cups of water
3 eggs
2 tbsp of baking powder

Stir until no lumps and pour into a greased/floured bread pan.  Cook at 400 degrees for 20 minutes.  Turn the oven off and allow the bread to sit in the oven until it is cool.

Bread Alternative: for things like pizza crust - I am hooked on chickpea frittatas.  Lucini's has an awesome mix.  Its super easy to make and so good for you!

Butter Alternative: I really like Earth Balance brand.  They have them in so many varieties that pretty much every allergy is covered.

Cheese Alternative: the best one I have fond is Daiya brand

Yogurt Alternative: there are a ton of yogurt alternatives but I really like So Delicious brand.  They taste so good.  I pretty much like anything that So Delicious puts out there.
